Sweet Potato Black Bean Chili

Serves 4

3 large sweet potatoes, peeled and cut into 1/2″ pieces

1 Tbsp. grapeseed oil

3 Tbsp. chili powder

3 garlic cloves, minced

2 tsp. cumin

1/4 tsp. cayenne

3 cups cooked black beans

2 large tomatoes, diced

2 Tbsp. honey

1/2 tsp. salt

1/4 tsp. pepper

In large pot, cook sweet potatoes and onion in oil until crisp-tender. Add spices, stir in beans, tomatoes, honey, salt and pepper. Bring to a boil, reduce and cover. Simmer 20 minutes or until sweet potatoes are tender.
