This is Dr. Klug’s favorite everyday “milk.” Plus it’s more economical than almond “milk.”
1/2 cup sunflower seeds
1/2 cup pumpkin seeds/pepitas
4 cups water
Pinch of salt (optional)
Pitted date or your preferred sweetener (optional)
Soak the sunflower and pumpkin seeds in a bowl for at least two hours or overnight. Drain. Put 4 cups water in a high speed blender and add drained seeds, and if using the salt and sweetener. Whirr. Place open nut milk bag in a large bowl. Pour mixture into bag and loop the tie of the bag on a cabinet knob to allow the “milk” to drain into the bowl for a bit, then squeeze out the remaining “milk.” For faster results skip the draining step.
