Minted Fava Bean Salad

Serves 4

Fava beans are an early summer treat available at local farmers markets.

Ingredients:

1/4 cup lemon juice

1/4 cup olive oil

1 clove garlic, minced

3 cups fresh or frozen shelled fava beans

4 cups Romaine lettuce cut into thin strips

1/2 cup firmly packed fresh mint leaves, cut into thin strips

Whisk together lemon juice, oil and garlic in small bowl. Season with salt/pepper if desired and set aside.

Cook shelled fava beans 3 minutes or cook frozen fava beans according to package directions. Drain, rinse under cold water.

Toss together cooled fava beans, lettuce, and mint in a large bowl. Add lemon dressing and toss to coat. Season with salt and pepper to taste.
