Serves 6
8 cups chicken stock
2 cups water
1 medium onion, diced
3 cups carrots, sliced in 1/4″ pieces
3 cups celery, sliced in 1/4″ pieces
4 cups cooked chicken
2 cup cooked quinoa
1/4 tsp. black pepper
1/4 tsp. crushed rosemary
Put chicken stock, water, and veggies in a pot. Bring to boil, reduce and simmer 30 minutes. Add cooked chicken, cooked quinoa and stir. Simmer to warm and serve.
