
These aren’t your standard cauliflower mashed taters!
THE SECRET is to add one small potato to give the cauliflower mash the look, taste and texture of regular mashed potatoes.
INGREDIENTS:
1 large head organic cauliflower
1 small russet potato
Garlic powder to taste (optional)
Salt
1-2 Tbsp Ghee (clarified butter)
dairy-free milk (enough to get the consistency you desire)
Chop the cauliflower and potato into small pieces and steam until tender. In a food processor, add the steamed veggies, ghee, garlic powder and salt. Process until “mashed”. I always add dairy-free almond milk (about 1 Tablespoon at a time) while processing until you get the consistency you desire.
Taste and adjust spices as needed.
