2 medium or 3 small sweet potatoes
2 Tbsp. grapeseed oil
Spice Mix Ingredients: (this makes enough for 5 batches)
2 tsp. ground cumin
1/2 tsp. chili powder
1/2 tsp. cinnamon
1/4 tsp. ground ginger
1 tsp. ground coriander
1/2 tsp. paprika
1/4 tsp. allspice
pinch of ground cloves
Preheat oven to 475. Cut sweet potatoes into fries (1/4″ strips). You can also cut into 1″ cubes. It’s easier and tastes the same).
Place cut potato pieces into a baggie or medium bowl with a lid. Add oil and 1 tsp. spice mix. Shake to coat.
Grease cookie sheet with coconut oil or grapeseed oil. Put potato pieces in a single layer. Roast 45 minutes turning every 15 minutes.
These keep for the week but get a little soggy. You can re-broil them or rewarm as you wish.
If you try to freeze these, they will get very soft. If you don’t mind the soft texture, they are fine to freeze.
