Black Bean Tomato Quinoa

Serves 4


2 Tbsp. fresh lime juice

2 Tbsp. olive oil

1/2 dropperful liquid stevia

1/2 tsp. salt

1/4 tsp. pepper

3 cups cooked quinoa

2 cups black beans, cooked or 1 – 15 ounce can black beans drained

2 medium tomatoes, diced

4 scallions, chopped

1/4 cup fresh cilantro

To make dressing, whisk together lime juice, oil, stevia, salt and pepper in a small bowl, set aside.

In a large bowl, combine cooked quinoa, cooked beans, tomatoes, scallions, and cilantro. Mix. Add dressing and mix to incorporate. Serve warm or chilled over a bed of spinach.
