Serves 4
Ingredients:
3 cups hazelnut milk (recipe here)
3 cups raw, chopped pumpkin*
2 Tbsp. raw honey or liquid stevia to taste
2 tsp. cinnamon
1/2 tsp. allspice
1/2 tsp. ground cloves
1/2 tsp. ground nutmeg
Cut pumpkin in half and scrape out seeds. Using a vegetable peeler or small knife, peel off skin. Cut pumpkin flesh into 1″ chunks. Place all ingredients in a Vitamix blender and process until smooth. Scrape sides if necessary. Keep blending until it starts to warm (in a Vitamix, the blades turn fast enough that you can even warm soups, etc., in them)! If not using a Vitamix, warm on the stove at a low temperature.
Either way, do not warm too much. You don’t want the temp to go over 115 degrees to keep the nutrients in tact. *Use a “cooking” pumpkin (also called a sugar pumpkin) since these are sweeter and less stringy.
This recipe uses raw, uncooked pumpkin so substituting canned pumpkin will not be the same (raw pumpkin is full of nutrition).
