Ingredients:
1 bunch celery, chopped
4 cups filtered water
1/4 cup olive oil
1/4 cup lemon juice
1 avocado
1 tomato, sliced
1 Tbsp. raw honey (or 1 dropperful liquid stevia drops – or to taste – for Phase 1)
salt and pepper to taste
Place all ingredients into a high speed blender, such as a Vitamix. Blend until smooth.
To serve warm, you can continue blending until it is slightly warm–high speed blenders can warm food too! When eaten uncooked, this soup is chock-full of healthy enzymes that are lost with heating. You could also warm on the stove until steamy, if desired, though.
