Coconut Gazpacho

This soup is meant to be served room temperature or slightly chilled.

Serves 2

2 cups coconut milk

1/2 cup freshly ground flax seeds

1/4 cup extra virgin olive oil

1/4 cup raw almond butter

3 Tbsp. apple cider vinegar

Liquid stevia to taste

2 tsp. sea salt

1/2 clove garlic

Place all ingredients in a high speed blender such as a Vitamix. Place soup in small serving bowls. Soup will thicken a little if left to sit a few minutes.
